Cannelloni
Bolognese con Spinach (Large
Reeds) Hand rolled
pasta sheets stuffed with our house Bolognese,
parmigiana and spinach topped with pomodoro
sauce and provolone. History: The Cannelloni was
made popular by Salvatore Coletta in 1907, in
Sorrento Italy. Prior to that they dated back to
1891 in Naples and were called Strascinati. The
American version is called
manicotti.
Cotoletta di
Porchetta
Milanese Breaded and
fried pork loin chop, topped with chef’s anchovy
compound butter, and served with angel hair
pomodoro. This juicy chop melts in your
mouth.
Pasta alla
Norma Diced eggplant,
bacon, tomatoes, basil, and a splash of pomodoro
sauce with ricotta cheese over penne quills.
History: This is one of the most elegant
Sicilian pasta dishes. The dish was created and
named for the opening of Bellini's opera Norma
in Sicily 1831.
